Cocktail number three in our Summer Series is all about easy drinking with a whiskey twist - and there's no better time of year for it, with ripe, fresh peaches at their peak. The Barrel Peach smash is juicy, bright and perfectly suited to these warmer days, letting smooth bourbon, seasonal peach and fresh citrus do the talking.
You can also substitute demerara syrup with honey or agave syrup for a slightly lighter, more summery finish.
Method:
1. Lightly muddle the peach slices and mint in the base of a shaker.
2. Add bourbon, lemon juice and demerara syrup, then fill with ice.
3. Shake hard until well chilled.
4. Strain over crushed ice into a rocks glass and garnish with a fresh mint bouquet and peach slice.
