Cocktail number four in our Summer Series is all about bright, tropical refreshment with a hint of herbal freshness. The Pineapple & Mint Daiquiri is zesty, crisp, and perfect for sipping in the sun, letting smooth white rum, fresh pineapple, and lively lime do the talking.
HOT TIP: You can also adjust the sweetness by using more or less pineapple syrup, depending on how tart you like your drinks.
Method:

Lightly muddle a few mint leaves in the base of a shaker to release their aroma.

Add white rum, fresh lime juice, and pineapple syrup, then fill the shaker with ice.

Shake vigorously until well chilled.

Double strain into a chilled coupe glass and garnish with a fresh mint sprig.
